Light Mutton Curry with Potatoes

Ingredients:

500gms mutton

2 large onions finely chopped

2 green chilies

1 medium tomato chopped

1- 2 large potato cut into cubes

2 sprig of chopped coriander leaves

4 tablespoon tamarind water

Pinch of sugar

1 teaspoon vinegar (optional)

3 tablespoon oil

Salt to taste

Powdered masala:

¼ teaspoon chili powder

⅛ teaspoon turmeric powder

Pre marinate:

1 ½ teaspoon ginger & garlic paste

Salt to taste

Masala to Grind:

1 teaspoon cumin

½ teaspoon turmeric

1” inch cinnamon stick

5 cloves

½ inch ginger

6-7 cloves of garlic

44-48 peppercorns

Little water

Preparation:

1. Wash, clean, cut and marinate the Mutton with G&G and salt; set aside.

2. After 5 minutes add the meat with 1 cup water into a cooker.

3. Cover and cook for 3 to 4 whistles. Set aside to cool.

4. Reserve the stock for later use.

5. In a pot take oil and sauté the onions till they turn translucent.

6. Now add the chopped tomatoes and green chilies. Cook till the tomatoes get soft.

7. To this add turmeric and chili powder.

8. At this stage add the cooked mutton and give it a stir

9. Now add the ground masala and stir the meat.

10. In the grinder add ½ cup water to remove masala that remains and add this masala water to the pot.

11. Cover and cook for 5 minutes.

12. It’s time to add the potatoes, stock water and salt to taste.

13. Now add tamarind water, cover and cook till the potatoes are done

14. To this add water if required, check salt to taste.

15. Sprinkle chopped coriander leaves, pinch of sugar and one teaspoon vinegar.

16. Cook for 2 minutes.

17. You’re Goan light Mutton and potato curry is ready to be served.
