Ingredients:
2 cups rice flour
Water as required (hot enough to be able to touch)
Salt to taste
¼ cup rice flour additional for dusting while rolling
Preparation:
1. Make 1 cup of water hot and keep it ready.
2. Next knead the flour with salt as per taste and water little at a time (don’t pour all the water at one time).
3. Water should be hot but hot enough to handle.
4. Knead to form a dough ( some folks will add the rice flour to the pot of hot water and stir to make the soft dough)
5. Cover and keep for 15 minutes.
6. Now make desired size dough balls for rolling into a chapatti.
7. Now add little flour on the flat surface and start shaping the roti – slight tap tap and turn in a circular motion.
8. You can do it on a flat surface or by continuously patting between both hands in a winnowing fan action.
9. Now place the roti on a hot kadai without oil. With wet figures damp the top side of the Hand-bread to make it slightly moist.
10. Now on low flame start cooking the bakri turning both sides.
11. Press it with a soft ball of cloth or a spatula.
12. Once roti is cooked on one side, turn on the other side and cook till done.
13. Ensure that the bakri is cooked on both sides, this will take a while.
14. The Chapattis will fluff up like a phulka.
15. Your rice roti / East Indian Hand breads are ready to be served.
