Pork Aad maas


800gms pork meat with bones

1 large onion chopped

1 green chili slit

80ml tamarind water

250ml water

3 tablespoon vinegar

½ teaspoon sugar

Salt to taste

Dry grind the masala coarsely ( If you are making curry then grind to a fine paste):

4 Kashmiri chilies (if you are using small size add 6)

11 cloves of garlic

¼ teaspoon cumin

½ teaspoon turmeric

18 peppercorns

16 cloves

1 inch ginger

1 ½ inch cinnamon stick

** while grinding onion is not added.

** No oil is required


1. Take a kadai / wok, add the meat, chopped onion, salt, sugar, vinegar, tamarind water, water and coarsely ground masala.

2. Cook this for 5 min, add slit chili and check salt to taste.

3. Let this cook slowly till the meat is cooked and the gravy reaches the required constancy.

4. I prefer it dry.
